BBQ Sausage and Sweet Potatoes

This was the first meal I cooked for my husband when we were just dating (over three years ago).  I like to think of it as the meal that stole his heart.  His football coach at BYU had been putting some pressure on him to gain weight that summer, so I guess I came along at the right time;)

Meat and potatoes, with some saucy stuff.  Man food at its finest.   

It’s still one of Brett’s very favorite meals and a frequent request of his.  If the man or men in your life is anything like mine, then this is great man food for Father’s Day.   Growing up my mom made this all the time, it’s one of my dad’s favorite as well. Serve it up with some grilled corn on the cob, corn bread, and a side salad and you’ve got yourself a great Father’s Day Meal.  

I usually use regular potatoes but this time used sweet potatoes.  I think I wooed my husband all over again;)

BBQ Sausage and Sweet Potatoes
Ingredients
1 Kielbasa Sausage Link (I like to use Lean Turkey Kielbasa Sausage), sliced into 1/2 inch pieces
1 sweet potato, peeled and cut into 1/2 cubes 
3 Tbs Extra Virgin Olive Oil
Salt and Pepper
1/4-1/2 c. of your  favorite Barbecue Sauce (we use Sweet Baby Ray’s)
Instructions
Preheat oven to 450.
In a medium-bowl toss sweet potatoes with 1 Tbs of olive oil, plus a dash of salt and pepper, until potatoes are evenly coated.
Roast in the oven for 25-30 minutes, turning once or twice.
When the potatoes have about 10 minutes left to cook, heat a large skillet with two tablespoons of Extra Virgin Olive Oil on medium-high heat.
Add the sliced turkey sausage and let cook until the meat is browned, stirring and turning occasionally. 
Once the potatoes are done, toss them in with the browned sausage (turn heat to low).  Add barbecue sauce and stir until meat and potatoes are evenly coated.  Use as much or as little barbecue sauce here.  You can always add more once it is dished up.
**I like to roast the potatoes in the oven, but you can fry them up in the skillet first (well oiled pan) before adding the sausage slices.

  3. I did the same thing with my husband! this was the first meal I ever made for him when we moved into our first place. When I first started making it I would put everything in a skillet. the potatoes would always take forever. My hubby isn’t a fan of sauces so I would spice it up with chili powder and garlic. I would dip mine in bbq. I am making it with the potatoes in the oven from now on.

  9. I have to ask, did you use yams or sweet potatoes because yams they look orange and only the yams at my store were orange. The sweet potatoes were not.

  10. I have to ask, did you make these with yams or real sweet potatoes and does it make difference. I choose real sweet potatoes since that is what the recipe said but mine aren’t orange. That’s why I wondered if they are yams.
