Chicken with Pepperoni Marinara Sauce

It’s pretty safe to say that pizza is one of our favorite things to eat.  I love it. The hubs loves it.  And of course, to little guy loves it.  I love making homemade pizzas but it can be a bit time consuming, and although we have our favorite places to order pizza from, we try to keep that to a minimum.  Because when it comes to pizza I lose all self control, and five slices later all I want to do is run on a treadmill for hours (the next day of course).  

This Chicken with Pepperoni Marinara Sauce is the perfect solution to satisfying that pizza craving and a much healthier one too. It’s a meal that comes together in 20 minutes and I promise, the whole family will love it.  I can handle a 20 minute meal anytime, even on those weekend nights when I really, really don’t want cook.  

You can imagine my husband’s excitement when I told him I was making chicken that tastes kinda like pizza for dinner.  He was stoked.  And we’ve had it three times in the last two weeks.  Not even kidding.

See…all the same melty, cheesy goodness you get from pizza.  And see all that pepperoni?  (I’m realizing I use the word melty a lot–am I missing something? It should totally be a word right?)

If you’ve got 20 minutes on your hands for dinner this week, make this.  And love it.

Chicken with Pepperoni-Marinara Sauce
Ingredients
1/2 tsp minced garlic
16-20 slices of pepperoni, chopped
1/4 tsp dried oregano
1 1/2 c. of your favorite Marinara Sauce
2 tbsp chopped fresh basil
2 tsp olive oil
1 1/2 pound chicken cutlets (I used chicken tenders–and I’ve used frozen and thawed, both work)
Salt and Pepper for seasoning
1 cup shredded part-skim mozzarella cheese
Instructions
Preheat broiler to high.
Heat a saucepan over medium-high heat and coat the pan with cooking spray.  Add garlic and pepperoni chunks; stirring frequently cook for 2 minutes or until garlic begins to brown.
Stir in oregano and stir for 30 seconds.  Add marinara sauce and bring to a boil.  Reduce heat and simmer for 5 minutes.  Remove from heat and stir in chopped basil.  Set sauce aside.
Heat a large ovenproof skillet over medium-high heat and coat with olive oil.  Season chicken with salt and pepper.  Place chicken in the skillet and cook for about 5-10 minutes (depending on if you’re using frozen or thawed) or until lightly browned turning chicken half-way through.
Spoon sauce over the chicken and sprinkle mozzarella cheese.  Place in broiler until cheese melts.  Remove and garnish with additional basil leaves (optional)
