Strawberry-Banana Muffins

Ever have those nights when your baby–in my case, TODDLER–wakes up at four in the morning, and once you get them back to sleep YOU can’t go back to sleep?   That was me yesterday.  I typically just watch TV until I fall back asleep, but when that didn’t work I decided to bake.  Why not make some yummy breakfast for the hubby and kiddo to wake up to?  Wife and mom of the year right here!  Kidding.  It’s actually something I rarely do.
   

Owen wakes up asking for a donut for breakfast every.single.morning. The ladies at the grocery store know me as the mom with the kid who is crazy about donuts.  He hoots and hollers, and squeals any time I let him get one. And they love it.

But most days, I walk out of there with him kicking and screaming, and crying because he didn’t get one.  

We-well, mostly me- played this mean little trick on Owen once and told him toast with cinnamon and sugar was a donut.  It worked.  He ate three pieces.  Ever since then he kind of thinks most breakfast foods are donuts….or we tell him they are.  A bagel? A donut! Pancake?  A donut!  A warm, muffin straight from the oven?  A doonuuutt!!

So when he woke up asking for a donut yesterday he got a big, warm Strawberry-Banana Muffin. Two actually.  As long as he’s eating breakfast I’ll let him think it’s whatever he wants it to be.  After all, it’s the one meal he doesn’t fight me on. 

 

These muffins are just begging you to make them. They are big and flavorful, and the strawberry-banana combo is amazing! I’m wondering why I never thought of it before.

I’ll even let you think they’re a dozen donuts if you want…only these are much better for you.

Strawberry-Banana Muffins
 
Ingredients
1 cup all-purpose flour
1 cup whole wheat flour
1 tsp baking soda
1 tbsp cinnamon
pinch of salt
2 eggs
3/4 cup brown sugar
1 tsp vanilla extract
1/2 cup vegetable oil
3 large very ripe bananas, mashed (about 1 cup)
1 cup sliced strawberries (fresh or frozen)
extra brown sugar for sprinkling
Instructions
Preheat oven to 375.
Line 12 large muffin cups with paper liners.
In a medium bowl, combine flours, soda, cinnamon, and salt and set aside.
In another bowl whisk together eggs, brown sugar, vanilla, oil (or applesauce), and mashed bananas.  Stir in sliced strawberries until just combined.  Reserve 12 strawberry slices or slice extra for topping.
Spoon batter into muffin liners until full (yes, they will be big!). Place a sliced strawberry on top of the batter and sprinkle tops with a pinch of brown sugar.  Bake for 20 minutes or until a toothpick inserted comes out clean. Let cool for a couple of minutes before flipping out of pan.
*to reduce fat use applesauce in place of the oil. I typically do this but we were out and it was way too early for me to go to the store.

  1. They look delicious! I was never able to sleep when I was pregnant, even if it was 3am, if something work me up…I was awake. I should have baked, but I usually watched TV, too. Hope you get a nap today. :-)

  2. So I guess if I send Owen a box of donuts for his birthday he will be happy. John gets donuts for his seminary kids and we have to hide them from Wes cause he will eat 10.

  7. That is funny! My daughter loves breakfast, as well, and will usually eat whatever we have. But it’s the only meal she is like that with!! I am a muffin addict, and I need to try these immediately!

    FYI, step 3 never actually tells you to incorporate the flour mixture.
