Egg White & Avocado Salad

I know I said I’d be back with a recipe on Friday, but we had issues with our Internet all weekend and just got it up and running again yesterday.  So here I am, on Monday, with this Egg White & Avocado Salad for you.   I love egg salads but I don’t love how most are packed with mayo.  This one is guilt free (at least for me) and I love the addition of avocado instead of using the egg yolk.     
 
We had a great time in Breckenridge with family.  The boys skied while The Girl Who Ate Everything, our MIL, and I,  watched kiddos, laid around, and ate our weight in food–well, at least I did.  
But that’s what I love about vacation.  And as soon as it’s over I spring into healthy eating mode and wait about a week before I weigh myself again. I’d rather not know the damage done in just a few days. 

Brett and I celebrated our 4th anniversary while we were there too.  We ate at this really cool underground Pub and tried just about everything from pizza, to wings, to a burger and fries.  Not the most romantic restaurant or food to be celebrating an anniversary with, but it was good.  Then we ate a cookie sandwich about the size of my face.

So you see, this egg white & avocado salad is just what I’m in need of right now. Light and healthy, yet satisfying.

Egg White & Avocado Salad
Ingredients
3 eggs, hard boiled
1/2 of one large avocado, cut into chunks
1 1/2- 2 tsp light mayonnaise
1/4 tsp salt
1/4 tsp pepper
1/8 tsp dill weed
Instructions
Peel the shell off each of the eggs, then remove the yolks.
Place the hard boiled egg whites in a medium bowl and cut into chunks with a knife and fork.  Score the avocado into large chunks and toss in with the egg whites.
Stir in light Mayo, salt and pepper, and dill weed.  Add more or less seasoning to taste.
Serve in a wrap, on a sandwich or eat the salad plain.

  11. I’ve only recently discovered how great eggs and avocado are paired together .. I love just avocado spread on toast with scrambled egg on top, but this looks like a great variation to try!
