Oatmeal Butterscotch Bars with Brown Sugar Glaze

I may be too tired to cook when it’s time for dinner, but I’m never too tired to whip up a batch of my favorite cookies or something sweet like these Oatmeal Butterscotch Bars in the middle of the day.   Never. 

 

I had forgotten just how much I love butterscotch until I made these.  They are pretty much like a giant cookie and taste just like the classic Oatmeal Scottie’s– only I took them a step further and added a totally unnecessary-but-completely-delicious brown sugar glaze.   
They’re so rich you’ll  really want to stop at one, but so good you won’t be able to. 

Which might just put you in a butterscotch-induced sugar coma.  
 
Oatmeal Butterscotch Bars with Brown Sugar Glaze
Ingredients:
1 c flour
1 tsp baking soda
1/2 tsp salt
3/4 tsp cinnamon
1 c butter, soft
3/4 c sugar
2 eggs
1 tsp vanilla
3 c oatmeal
1 (12 oz) package of Butterscotch Chips
Instructions
Preheat oven to 350.
Grease a 9×13 in. pan and set aside.
In a small bowl combine flour, soda, salt and cinnamon and set aside.
In another large bowl, beat butter then add sugar and beat until fluffy.  Add eggs and vanilla and beat until smooth.
Gradually add the flour mixture.  Stir in oatmeal, then butterscotch chips.
Spread batter into the greased pan.  Bake at 350 for 22-25 minutes
**If the edges seem to be browning but is still gooey in the middle, reduce to temp to 325 for last 5-10 minutes.
Once cool, frost with brown sugar glaze.
Brown Sugar Glaze
Ingredients:
1/4 c butter
1/2 c brown sugar
1/8 c milk
1/2 c sifted powdered sugar
Instructions
In a saucepan melt butter.  Stir in brown sugar and bring to a boil.  Lower heat to medium and continue to beat for two minutes, stirring constantly.  Add the milk and return to boil (continually stirring).
Remove from heat and let cool to luke-warm temperature.  Gradually stir in powdered sugar and beat until smooth.  Add more powdered sugar if needed.  If it seems too thick you can add a little bit of warm water until you reach the desired consistency.

  10. These are amazing. I almost skipped the glaze, but am so glad I didn’t. Yum. I got 36 1″x2″ bars out of the recipe, and I slivered the edges off, so that each bar has square corners. Tks for posting!

  11. Oh yes, Oatmeal Scotchies are one of my favorite cookies. Definitely top 5. I was going to make some earlier today, but then got too busy (lazy?)…I don’t know why I didn’t think to just make them a bar cookie! And I love brown sugar, so I think I’ll try these tomorrow!
