Gooey Chocolate Butter Cookies

Let me tell you about my two year old.

The kid thinks he’s Spiderman.  He’s out to get every bad guy and every monster out there, and I get to be his side kick. But he just doesn’t understand why his “webs no work???”

Yesterday at the grocery store, I found several additional items in my cart as I went to check out.  He insisted he needed more Spiderman “Sippy Pups”, Lucky Charms, and several Tootsie Rolls.  Sneaky little devil.   

He wants chocolate and Kool-aid for breakfast and fruit snacks and jerkey for dinner.

He recently started negotiating clean-up time, time to go time, bed time, and breakfast-lunch-and-dinner time.  “Two minutes mom” is what I get after telling him it’s time to do ANYTHING. 
Last week he started referring to me by my first name.  

And a few days ago he told me to “Take a deep breath mom.”

Really? Take a deep breath mom? Who’s kid is this?

 

Certainly not mine.  Because I don’t eat chocolate for breakfast.  Ever.  Not even when I’ve got these Gooey Chocolate Butter Cookies sitting on my counter.

He’s not my child at all.

Gooey Chocolate Butter Cookies
Ingredients
1 (8 oz) cream cheese, soft
1 stick butter, soft
1 egg
1 tsp vanilla extract
1 box chocolate cake mix
Powdered sugar for dusting
Instructions
Preheat oven to 350. 
In a mixing bowl, beat the cream cheese and butter until smooth.  Beat in the egg and vanilla extract.  
Next beat in the chocolate cake mix.  Cover and refrigerate for two hours before baking. 
Roll dough into tablespoon sized balls, then roll in powdered sugar.  Place on a cookie sheet lined with parchment paper and bake for 11-12 minutes.  Cookies should stay soft and gooey.  
Sprinkle with more powdered sugar.

  1. At least he only asks for 2minutes. My 3 yr old says 5 minutes when he is told to do anything! And he calls me Ms Kelly half of the time- the other half I’m “mudder” (mother)!!

  3. I use the ” it’s 2 minutes ’till”…. Seems to work for the most part. We still get “but muuuuuuum….!” they’re all the same in their own little ways! Gotta love it!
