For Vinaigrette:
- ½cupolive oil
- ⅓cupfresh cranberries
- 1tsporange zestdivided
- 2tbsporange juicefresh
- 1tbsphoney
- 1tbspgranulated sugar
- 2tspDijon mustard
- ½tspsalt
For Salad:
- 5ozbaby spinach
- 2bartlett pearssemi-firm but ripe, cored and sliced
- ¾cuppomegranate arilsor ½ cup dried cranberries
- ¾cuppecanschopped
- ⅓cupgoat cheesecrumbled (optional)
Instructions
Vinaigrette:

Add all of the vinaigrette ingredients to a food processor, starting with 1/2 teaspoon of orange zest, adding more to taste as you go.

Pulse until the cranberries have been pureed into the dressing.

Transfer to a jar, then cover and chill until ready to use.
Salad:

Layer salad ingredients into a bowl. Drizzle desired amount of dressing over the top.
