Apple Cider Muffins

Whipped up a batch of these warm Apple Cider Muffins over the weekend.  It was only fitting with Saturday marking the first official day of fall. 
 
My husband’s been super sick for the last two weeks and hasn’t had a sense of taste or smell.  But on Saturday, he woke up feeling a little better and ate one of these muffins.  All he had to say about them was “These taste like fall.”
 

These beauties scream fall.

Not only does the combination of apple cider, cinnamon and cloves, and chunks of fresh apple taste like fall, but your entire house will smell like it! 

 
Mission accomplished.  Now go bake some!
 
Apple Cider Muffins
 
Ingredients
1 cup all-purpose flour
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp ground cinnamon
1/2 tsp ground cloves
1/4 cup butter, soft
2/3 cup granulated sugar
1/3 cup light brown sugar
1 tsp vanilla
2 eggs
1/2 cup apple cider (or apple juice)
1 large apple, peeled, cored, and chopped into chunks
 
Instructions
Preheat oven to 350.  Place muffin liners in a muffin tin or lightly grease a muffin tin and set aside.
In a medium bowl, combine flours, baking soda, baking powder, salt, cinnamon, and cloves and set aside.
In a large bowl, cream together butters and sugars, then beat in eggs and vanilla.
Alternate mixing in dry ingredients with apple cider (about half at a time) until just mixed in  (don’t over mix). Stir in apple chunks.
Pour batter into prepared muffin tin and bake at 350 for about 25-35 minutes or until a toothpick inserted comes out clean.
**you can also pour this into a greased loaf pan to make bread!  bread will take a little longer to bake (40-50 minutes or until passes toothpick test)

    I made these on friday and we ate then saturday morning with low fat yogurt. These are wonderful! I left the skins on the apples and used butter vanilla. Thank you for a fantastic muffin recipe!
