Chocolate Chip-Pecan Pumpkin Spice Pudding Cookies

 

I’ve made these cookies about five times in the last month.  Because about a month ago I bought out the entire stock of Jell-O Instant Pumpkin Spice Pudding at Wal-Mart. Mostly with intentions of making this Pumpkin Lust Cake a few times this fall.  But that left me with about a dozen extra boxes of Pumpkin Spice Pudding.  

So I’ve been making batches and batches of these cookies.
 
 
I wish I could tell you the reason I have yet to share them is because  I’ve been perfecting the recipe over the last month.  I have a growing collection of pudding cookies and the recipe is an easy one.  
The truth is they’ve just vanished before I could take a decent picture.  
 The last time I made these, ahem, over the weekend, I added pecans.  That might have been the smartest thing I’ve done in a while.  Or dumbest.  Two dozen cookies later….I’m feeling a teeny bit guilty.  
 
 
 
But at least I took a picture.
Chocolate Chip Pecan Pumpkin Pudding Cookies

Ingredients
  1. 1 cup butter, room temp
  2. 3/4 cup brown sugar
  3. 1/4 cup sugar
  4. 1 (3.4oz) package Jell-o Instant Pumpkin Spice Pudding (found at Wal-Mart)
  5. 2 1/4 cups flour
  6. 1 tsp baking soda
  7. 2 eggs
  8. 1 tsp vanilla
  9. 1/2 cup chopped pecans
  10. 1 cup milk or semisweet chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine flour and soda in a small bowl and set aside. Cream together butter and sugar. Beat in pudding mix until blended, then eggs and vanilla. Add flour and soda mixture. Stir in pecans and chocolate chips. Using a cookie dough scooper, place dough on a baking sheet lined with parchment paper. Bake at 350 degrees for 8 -10 minutes. Let cookies cool for 5 minutes on baking sheet before moving to a cooking rack. Store in air-tight container. Makes two dozen.

    I did the same thing with the pumpkin pudding…and then promptly ate them all! Good thing for kids lunches so I could get them out of the house fast!!!

    Has anyone tried these with white chocolate or toffee chips? I have 3 boxes of pudding so I may have to try 3 different chips!

    I looked everywhere (Walmart, Target, Shop N Save, Dierberg’s, and Schnucks) for pumpkin spice pudding, and couldn’t find it. I was super disappointed.

    So I modified the recipe a bit… and used Jello’s butterscotch instant pudding and added 1 tsp of pumpkin pie spice instead. The results were awesome; they still tasted like pumpkin. I also used dark chocolate chips, which were perfect. Highly recommended cookie recipe!
