Skinny Pumpkin Pie Ice Cream & a Blendtec Blender Giveaway!

****This giveaway has ended!
Happy Monday! Today is a seriously good day! Head on over to my Giveaway Page where you can enter to win a Blendtec Blender!

Brett and I bought our first Blendtec blender a few months ago and we absolutely love it! We use it almost every day (sometimes multiple times a day) to blend up our morning protein shakes, green smoothies, soups and sauces, ice cream, and we’ve even used it to make gourmet hot chocolate.  I’ll share that one with ya later.

This Pumpkin Pie Ice Cream however, is our recent favorite treat.  And might I add that it’s skinny ice cream.  Like, guilt-free, eat-as-much-as-you-want, no-need-for-your-stretchy-pants kind of ice cream.  Totally.  Eat all you want.

Into the blender goes some pumpkin puree, pumpkin pie spice, frozen banana, vanilla protein powder, milk, cream, vanilla extract, agave nectar, and some ice.  Hit the ice cream button on your blender and let it blend away.

{Someone was sneaking a taste before it made it to our cups.  Guilty husband.}

The ice cream turns out pretty firm (like real ice cream) right after you blend it, it just melts pretty quickly.  That’s why we like to pour it into cups or jars.  We start with spoons and as it melts we just drink it up.

If you want it a little firmer just stick in the freezer for ten minutes or so or until you’re ready to serve it.

    Sounds delish! Here’s a little tip i’ve learned from making smoothies… buy a bunch of bananas (they are cheap enough) slice them, place on baking sheet, freeze and then place in baggy in freezer until ready to use. If you use frozen bananas there will be no need for ice which i think waters down the taste. The frozen bananas thicken up the smoothies so much that we have to eat with a spoon :)
