Peppermint Chocolate Marshmallow Cookies

I hope you all had a wonderful Thanksgiving, enjoyed time with family, and ate lots and lots of stuffing and pie…that’s what I filled up on.  And continued to eat pie all weekend long:)  But heck, I’m ready for more sweets, aren’t you?  Now that Thanksgiving is over it’s time for some Christmas goodies and Holiday party food.  Heaven help me pace myself from here until New Year’s.
 

These Peppermint Chocolate Marshmallow Cookies are a fun and festive Holiday twist on the classic Chocolate Marshmallow Cookies.  I’ve made a peanut butter version and love those, but let me tell ya,  peppermint, chocolate and gooey marshmallows make for an unbelievable combination.

 
I just love watching to marshmallows get all puffy in the oven, then drenching them in chocolate-peppermint frosting.  
 

 

 

Be sure and add these babies to your goodie plates this year!  They are definitely best the day you make them, the marshmallows stay nice and gooey.  But not to stress, you get to use a cake mix for the cookies to save you some time this busy holiday season.  

Oh yes, you want these. 

Peppermint Chocolate Marshmallow Cookies
 
for the cookies:
1 box chocolate cake mix
1/2 cup oil
2 eggs
10-12 large marshmallows, cut in half
1/4 cup Andes Peppermint Crunch Baking Chips
frosting:
1 cup sugar
1/4 cup milk
1/4 cup butter
1/2 cup semisweet chocolate chips
1/4 cup Andes Peppermint Crunch Baking Chips
Instructions
Preheat oven to 350.  
Combine chocolate cake mix, oil, and eggs until combined.  Form into one-inch balls and place baking sheets lined with parchment paper.  Bake for 6 minutes then remove from oven and place one-half of a marshmallow on top of each cookie (sticky side of marshmallow facing down).  Bake for another two minutes and remove from oven.  Gently smash the marshmallows down with a spatula and remove cookies to a cooling rack.  
Meanwhile, combine sugar, milk and butter in a saucepan-melt and bring to a boil.  Remove from heat and stir in chocolate chips and peppermint chips.  Continue stirring until smooth.  Frosting should thicken up.  
Pour frosting over the top of each cookie, then sprinkle a few peppermint chips over the top.
