How To Make Chicken Mushroom Casserole
This chicken mushroom casserole is the perfect weeknight dinner. It’s easy, hearty, and filling. It combines chicken, mushrooms, rice, beans, and cheese.

Ingredients
- 2tbspolive oil,divided
- 8ozchicken breasts,cut into bite sized pieces
- ½small onion,diced
- 8ozmushrooms,sliced
- ½tspitalian seasoning
- 1pckgZatarain’s® Parmesan Garlic Brown Rice with White Beans
- 1½cupsboiling water
- parsley and parmesan cheese,for garnish
Instructions

Preheat oven to 375 degrees F. Grease a 2-quart casserole dish.

Season chicken with Italian seasoning, salt & pepper to taste. Cook chicken in 1 tablespoon olive oil until lightly browned (it does not need to be cooked through). Remove from heat and add to the casserole dish.

Heat remaining oil in the same pan. Add onions and cook for 2 to 3 minutes or until softened. Add mushrooms and cook for about 4 minutes or until tender.

Add mushroom mixture to the casserole dish along with remaining ingredients (except garnish). Stir and cover tightly with foil or a lid. Bake 35 minutes or until rice is tender. Remove foil and bake 5 minutes more.

Rest 5 minutes. Stir, garnish and serve.
