Kid Friendly Pepperoni Biscuit Pizzas

My new friend in the neighborhood, Whitney, made these pizzas for our kids at a lunch-play date last week.   After running a muck at her house for over an hour, the kiddos were sweaty, stinky and hungry– and devoured a dozen of these individual pizzas.  She said she typically lets her son help make them because they’re quick, easy, and helps him get excited about eating!   
 
I have made mini pizzas on English muffins before, but why hadn’t I thought of using biscuits? 
 

So earlier this week Owen got to go to work making his very own pizzas (with some help from me of course).  He had so much fun, got a little too happy with the cheese, and kept telling me he needed more “macaronis” on his pizzas.  Macaronis=pepperonis.  He’s just like his dad.  Brett’s been known to steal the pepperoni and other toppings off my pizza.

And yes, sometimes we eat lunch in our pjs.

 
Don’t be fooled by the face.  He ate two pizzas and has been asking to make more all week.  Don’t be fooled by me either, I ate two as well.  They’re tasty!
 

  

Turn these into mini heart shaped pizzas for your kiddos on Valetine’s Day! 
 
Easy Pepperoni Biscuit Pizzas
 
Ingredients
1 tube Grand’s Homestyle Wheat Refrigerator Biscuits
1 (14 oz) jar spaghetti sauce
1 pkg pepperoni slices
2 cups shredded cheese (preferably mozzarella)
Directions
Preheat oven to 350. Place sliced biscuit dough on baking sheets lined with parchment paper.
Gently flatten biscuits with palm of your hand, until about 1/4″ thick.
Bake for 8-10 minutes until lightly golden (but not completely done cooking). Cover with a spoonful of spaghetti sauce, then top with cheese and pepperoni slices.
Bake for another 3-4 minutes until cheese is melted.
