I’m a grazer by day and even though I enjoy full meals (believe me, I do) I really like snacky, bite-sized, little things and find myself snacking on them all day long.
Like cereal. Quaker’s Oatmeal Squares is one of my favorites to snack on. No milk necessary, just handfuls throughout the day.
But last week I saw some Chocolate Covered Cheerios Shelly from Cookies & Cups made and thought these little crunchy Oatmeal Squares would be ten times better sweetened up with a coating of chocolate…and of course a little peanut butter.
Dipping and rolling each square of cereal can be time consuming and a little tedious, but it’s worth it. Now I’ve got a dangerously addictive snack that’s kind of like a dessert on my hands.
Feel free to use your favorite cereal here- Cheerios, Honeycombs, Captain Crunch! I think the crunchier the cereal, the better!!

White Chocolate Peanut Butter Covered Cereal Squares
2 cups Quaker Oatmeal Squares (or any other crunchy square cereal)
12 oz almond bark (or white melting chocolate)
2 tbsp peanut butter
1 tsp vegetable oil
Melt chocolate and vegetable oil in microwave (stirring every 30 seconds) or use a double broiler, until almost completely melted.
Stir in peanut butter and microwave for another 5-10 seconds. Remove and stir until smooth.
Place several cereal squares in chocolate-peanut butter mixture. Use two spoons to turn each piece of cereal until covered then move onto a cookie sheet covered with wax paper (gently shaking off any excess chocolate).
Let cool completely then store cereal in an air-tight container.
