Copy Cat Trader Joe’s Cilantro Jalapeño Hummus & a Giveaway!

Trader Joe’s has this three layer hummus that Brett and I are obsessed with.  It’s a combination of traditional,  Cilantro Jalapeño, and Spicy hummus, all layered in to one little container. Anytime we head to Salt Lake we try to make a stop at TJ’s to stock up.  But we’ve found we both really like the Cilantro Jalapeño layer– and we’re usually both digging for the last little bite of it…hovered over it…elbow to elbow.  Just kidding….kind of. 

To avoid any more marital conflict ;) I thought I’d try to recreate it, and make a big ol’ batch of it for us both to enjoy.  And I think I nailed it!

All you need is garbanzo beans, a bunch of cilantro, jalapeños, limes, garlic, olive oil, and some salt.  And you pretty much just throw it all into your  blender or food processor and blend until it’s smooth and creamy.  Easy peasy.  You’ll want to let the hummus chill over night to really let the flavors meld together. 

Feel free to add more or less cilantro, jalapeños, and lime juice to your taste and liking!

Ingredients
  1. 2 (16 oz) cans garbanzo beans, rinsed and drained
  2. 1/4 cup extra virgin olive oil
  3. juice of 3 small limes
  4. 3 tsp minced garlic
  5. 2 cups roughly chopped cilantro
  6. 3 small (or 2 large) jalapeños, chopped and seeds removed
  7. 3/4 tsp salt
Instructions
  1. Place everything in a food processor or Blendtec and blend together until smooth and creamy. Chill overnight before serving.
  2. Serve with chips, crackers, or veggies.
Notes
  1. chilling over night allows the flavors to really meld together.
  2. leave some of the seeds from jalapeño in to add some heat
