Mexican Scrambled Eggs Recipe

Ingredients

  • 1 cup tortilla chips, crumbled
  • 1 tbsp. vegetable oil
  • 1/2 cup cheddar cheese, grated
  • 1/2 cup salsa, jarred
  • 8 eggs

Instructions

  1. Heat oil in a sautée pan.
  2. Cook salsa 30 seconds.
  3. Add crumbled tortilla chips and continue cooking an additional 30 seconds.
  4. Break eggs into a bowl and break yolks.
  5. Add to salsa mixture and cook until set, 3-4 minutes.
  6. Sprinkle with cheese and serve.
