Brett and I are hosting Thanksgiving dinner here.   My parents, grandma, and brother will be arriving the day of so it’s up to me and my sister-in-law Kimi to do the cooking.  She’s already offered to do the rolls.  Whew.  Her rolls are a labor of love.  I love her. 

My goal is to keep dinner really simple. Here’s what I’m thinking– 

♦ The bird = two turkey breast roasts from Costco.  One will be roasted in the oven, and the other one grilled.  Really excited about grilling a turkey!

♦ Rolls = homemade by my SIL!

♦ The sides =  mashed ‘taters, sweet ‘taters, stuffing, and these simple Roasted Garlic & Herb Buttered Green Beans.

Side note-  I don’t love classic green bean casserole.  It’s just not my must-have Thanksgiving side dish (that would be the stuffing).   

But I do love green beans, so I made these super simple green beans that are much lighter, healthier and have great flavor! I simply sautéed green beans in Private Selection’s new Roasted Garlic & Herb Finishing Butter and topped them with toasted almonds. 

I tell my kids the green beans are green french fries and they fall for it every time.

Don’t think I forgot about dessert.   There will of course be dessert- I’m thinking Razzleberry Pie (Marie Calendar’s- it’s my dad’s favorite!), pumpkin pie, and banana cream elcair pie 

Sounds simple enough right?  Now to make my grocery list and get shopping! 

Roasted Garlic & Herb Buttered Green Beans with Toasted Almonds

Ingredients
  1. 2 cups fresh or frozen green beans
  2. 1 clover of garlic, minced
  3. 3 tbsp Private Selection Garlic & Herb Finishing Butter (found in Kroger family stores)
  4. 1/2 cup slivered almonds
  5. salt and pepper to taste
Instructions
  1. 1. Blanch green beans in boiling water for 5 minutes. Drain and place in an ice bath for 2-3 minutes. Drain and set aside.
  2. 2. Heat 1/2 tbsp of Garlic & Herb Butter in a small saucepan over medium-low heat. Add slivered almonds, cook and stir frequently until almonds are a golden-brown color. Remove from heat and set aside.
  3. 3. Heat another large saucepan with 2 tbsp of Garlic & Herb Butter over medium heat. Add garlic and sauté for a few minutes, then add the green beans and sauté for about 5-6 minutes until cooked and slightly tender (but still crisp).
  4. 4.Toss in slivered almonds. Season with salt and pepper and serve and add remaining tbsp of roasted garlic butter. Serve warm.

  3. We thought about grilling out turkey this year, but decided we’d try it on a day that it didn’t matter! :) These green beans look like the perfect Thanksgiving side!
