We’re spending Christmas in Colorado with my in-laws and we are off to do some last-minute shopping today {with the kiddos…so it might be the shortest shopping trip ever!}  Are you guys ready?  We’re almost there. 

On Thursday, Brett called me around 1pm and said “Can you have everything packed and ready to leave for Colorado in an hour?” 

Ummmm.  No.  Definitely not.  

I was in the middle of doing laundry, hadn’t packed a thing and our Christmas presents were scattered in different hiding places throughout the house.  But he thought we needed to leave town that afternoon (instead of the following day as planned) to beat the snow storms and icy roads.  So I frantically through everything I could think of in bags. 

So far, I’ve only had to buy toothpaste for the kids and shoes for Miles.  Not too bad for a week’s worth of packing done in an hour.  Can’t wait to see what else I forgot!

I made these sugar cookies the day before we left to take to friends.  I’m such a sucker for a good, soft sugar cookie.  I like them thick and soft, and covered in thick and fluffy frosting.  These cookies are just that.  

The recipe is from an old co-worker of mine, Cher.  We worked together at an eye clinic over six years ago.  The office put together a cookbook of everyone’s favorite recipes and I just happened to start working there shortly after the cook-book was printed and got a copy.  The office was full of foodies so the cookbook is full of great recipes.  

Like Cher’s Unforgettable Sugar Cookies.  The cookie dough has a hint of almond flavor, and is simple and makes a lot of cookies.  You can frost them with your favorite frosting, but I covered them in almond buttercream that melts in your mouth.  It’s what really makes these cookies so perfect!

Unforgettable Sugar Cookies

Ingredients
  1. 2 cups butter, soft
  2. 2 cups sugar
  3. 6 eggs
  4. 7 cups flour
  5. 2 tsp baking soda
  6. 4 tsp cream of tartar
  7. 3 tsp vanilla
  8. 4 tsp almond extract
Instructions
  1. Preheat oven to 350.
  2. Cream butter and sugar. Add eggs one at a time. In a separate bowl combine flour, baking soda, and cream of tartar. Beat flour mixture into wet mixture. Add flavorings last. Roll out dough 1/4 inch thick and cut out desired shapes. Place cookies on cookie sheets lined with parchment (do not use cooking spray). Bake 9-12 minutes. DO NOT OVERBAKE. Makes 5-7 dozen depending on size of cookies.

Ingredients
  1. 1/2 cup butter, soft
  2. 1/2 cup butter flavored crisco, soft
  3. 5-7 cups powdered sugar
  4. 4 tbsp whole milk
  5. 1 1/2 tsp vanilla extract
  6. 1/2 tsp almond extract
Instructions
  1. Cream butter and crisco together until fluffy. Alternately beat in powdered sugar and milk. Beat in vanilla and almond extracts and beat for several minutes until smooth and fluffy. Add more or less powdered sugar and milk to get desired consistency.
