I tend to crave things like cheeseburgers and french fries, pizza, and Mexcian food when I’m pregnant.  I always like those foods, but when I’m pregnant the cravings are  so much stronger.   I once cried when Brett screwed up my order for a cheeseburger.  That was with my first pregnancy, but it goes to show I’m serious about my cravings.  When I’m not pregnant, dessert is my weakness.   But now, it’s all the salty, cheesy naughty foods that get me.  It takes a lot of will power not to give in.  And sometimes I do:)  Okay, a lot of times.  

Like last week at the store I walked down the chip isle and suddenly  had to have Doritos.  I never buy Doritos, not even for my kids.   But I bought them and  I’ve been putting them on my turkey sandwiches lately. It’s the best thing ever!!  Such a kid thing to do right? My husband just laughs at me and my cravings. 

Is it at least okay to give in to my naughty cravings if I start my day with these healthy Blueberry Lemon Protein Pancakes?  I think so.

The good thing is I’ve also been craving tart and fruity things.  So even these healthy pancakes hit the spot.  The batter is  made with with oats, cottage cheese, egg whites and lemon.  I made a really simple blueberry compote (made with honey instead of sugar) to go over the top.  The compote is like a syrup and you really don’t need anything else with them, but if you want you can give the pancakes a drizzle of honey too! 

The warm, juicy blueberries pair perfectly with the slightly lemon-flavored pancakes! They’re packed with protein and a great way to start the day.

Blueberry Lemon Protein Pancakes
  1. 1/2 cup oats
  2. 1/2 cup cottage cheese
  3. 3 egg whites
  4. 1 scoop vanilla protein powder
  5. 1 tbsp lemon juice
  6. 1 tsp lemon zest
  7. 1 1/2 cup blueberries
  8. 1 tbsp honey
  9. 1/4 cup water
  10. 1/4 tsp lemon zest
  1. In a small saucepan bring 1/4 cup water and 1 tbsp honey to a boil. Add blueberries and sprinkle with lemon zest. Reduce heat to a simmer and let simmer until berries are plump and start to burst. Remove from heat.
  2. Place everything else in a blender and blend until mixed. Pour batter (about 1/4 cup at a time) onto a lightly greased griddle over medium heat. Cook for 3-4 minutes or until bubbles start to appear. Flip and cook for another 2-3 minutes or until golden.
  3. Top pancakes with warm blueberry compote and a drizzle of honey. Enjoy!
