Cinnamon Rock Candy


Around Christmas time I become a little bit cinnamon obsessed.  I want cinnamon flavored and cinnamon scented everything.  Cinnamon rolls, chocolate cover cinnamon bears, cinnamon candles,  cinnamon scented pine cones.    And homemade cinnamon candy.  My mom used to make giant cinnamon suckers and this Cinnamon Rock Candy around the holidays, so making this is just a bit nostalgic.

This candy is fun and easy to make, and it’s an easy treat to package up for friends and neighbors this Christmas.  And to place in a jar on your counter top so you can suck on a piece here and there all month long, like I plan to do.

You start by bringing some light corn syrup and sugar to a boil.  Once it reaches 300 degrees or hard-crack stage, remove it from the heat, stir in red food coloring and cinnamon oil and pour the mixture into a pan. You can find a description of hard-crack stage here.
For the rock candy, once the candy has cooled you simply bang on it with a spoon (gently) and it will easily crack into pieces.  Kids totally love being the candy smashers.  

Pour the candy pieces into a plastic ziplock bag, sprinkle in some powder sugar, seal the bag and give it a shake to coat all the pieces evenly.

 Aaaaand you’re done! Spicy little cinni rocks to nibble on.
You can make this in any flavor or color, or use this recipe to make suckers as well.  
Cinnamon Rock Candy
  1. 1 cup granulated sugar
  2. 1/2 light corn syrup
  3. dash of salt
  4. 1/2 tsp cinnamon oil
  5. 3-4 drops red food coloring
  6. powdered sugar
  1. Bring sugar, corn syrup and a dash of salt to a boil and let boil until it reads 300 degrees on a thermometer or reaches hard-crack stage. Remove from heat and stir in food coloring and cinnamon oil.
  2. Immediately pour onto a parchment lined pie pan or 8X8 in. pan. Once it cools completely and is hard, gently tap on the candy to crack it. Place candy pieces in a zip lock bag and pour a spoonful of powdered sugar in. Seal the bag and shake to coat the candy.
  3. This recipe will also make about 12 hard suckers. Just pour into sucker molds placed on parchment paper instead of pouring into a pan.

    Could I use peppermint extract instead of cinnamon oil? And if so do I still do 1/2 a tsp? This looks amazing by the way, but my hubby is not a fan of cinnamon.

    This looks awesome! my question is about the cinnamon oil. Is it the same oil that you can use to scent things? I have only seen the potpourri type oils. Can you actually consume that stuff?

      Hi Jean! Yes, they have oils specifically for baking and candy making!! You can find it in most baking isles at stores or craft stores like Michaels, JoAnns, Hobby Lobby–in the baking section!!
