My Favorite HEALTHY Eats of 2011

Happy 2012!  How is your New Year going?  I have to say the first few days of 2012 have been a bit of a whirlwind. 
After being gone for almost two weeks, we made the 8 hour drive back to Utah on Saturday and had company stay with us through Monday.  
I barely stayed awake to ring in the New Year–I may have even dozed a few times before the big count down. 
I’ve done a bajillion loads of laundry in the last two days, grocery shopped like a mad woman, and we even squeezed in dinner with friends to watch The Bachelor on Monday (And oh boy, isn’t this season going to be a drama-filled doozy? Can’t wait!)
I have great intentions to start the year out with healthy recipes for everyone, but first I need to relax…and then fold more laundry.  So until then, enjoy some of my favorite healthy dishes from 2011
