Easy Parmesan Buttered Egg Noodles

easy-parmesan-buttered-noodles-recipe-sweettreatsmore.commain6Every once and a while, everyone needs some buttered noodles in their life.   And truth be told, I loved buttered noodles as a kid (and apparently still do~it had just been a while).  I’d ask to skip the spaghetti sauce and just drench my noodles in butter with a little bit of  cheese and salt and pepper.  

Which basically requires no recipe, it’s butter and noodles people!!  But in case you need a little guidance I thought I’d share these.  A slightly more adult version that the kids will still gobble up.  Buttery, cheesy egg noodles with a little bit of lemon and basil.

They can be the perfect copout meal (read – I’m tired and pregnant and don’t wanna think about cooking ) OR they can be the perfect simple comfort food meal. Reminiscent of your childhood. It seriously warmed my heart a little to watch my boys eat em’ up and ask for more.  

I know, they’re so ridiculously easy it seems ridiculous to share them.  By the small chance some of you have never ever had buttery noodles, I beg to try some!

Easy Parmesan Buttered Egg Noodles

Ingredients
  1. 12 oz package extra wide egg noodles
  2. 1/2 cup butter (use more ore less butter if desired)
  3. 3/4 cup Parmesan cheese
  4. 1 tbs lemon juice
  5. 1 tbs fresh chopped basil
  6. salt and pepper to taste
Instructions
  1. Fill a pot with water and bring to a boil. Add noodles and cook until al dente. Drain and return to pot, but not over heat. Add the butter, Parmesan cheese, lemon juice, and basil. Gently stir until the butter and cheese is melted. Season with salt and pepper to taste. Serve.

Yesterday Owen turned four!  We did the unthinkable and had about 18 three to four year olds over for a birthday party! It was crazy and complete chaos, but probably the most fun Owen has had in a while!  In honor of the birthday boy, I thought I’d share his favorite dinner lately–Cheesy Mac & Toe.  Pasta, diced tomatoes, and three kinds of cheese.  The dinner of champions for my four year old.  I kinda love it too. 

Right after I graduated college I moved from Oregon to Utah and didn’t have a clue where I was going to live or work.  One of my best friends who lived in Provo  offered to let me move in with her and her husband for a couple of months or until I found a place.  Or got a job and could afford a place.  As I think back on it, it never felt awkward living with my married couple friends, but I have to wonder how they really felt about it. She was like a sister so I never really thought twice about it.  Anyways, lucky for them it didn’t take long for me to get a job and move out.  One of the most memorable times I have from living with them, is Tami’s famous Mac & Toe, as she called it.  Because it was like mac and cheese, but with tomatoes.  It was a staple for them and in the month or so that I lived there we ate it frequently. It was so plain and basic, but so good.

It’s been over seven years since then, and I’ve thought about that Mac & Toe plenty, but I just got around to making it a few weeks ago.  I’m not sure if this is how she made it, but the concept is the same.  Simple and delicious. 

And  all you really needed to know is that it only takes 15 minutes to make.  ‘Nuff said, right?  Give it a whirl.  

15 Minute Cheesy Mac & Toe

Ingredients
  1. 3 cups uncooked whole wheat rotini pasta
  2. 1 (14.5 oz) can diced tomatoes
  3. 1/4 cup grated Parmesan cheese
  4. 1/4 cup shredded cheddar cheese
  5. 1/2 cup freshly grated Mozzarella cheese
  6. 1 tsp garlic salt
  7. Salt and pepper to taste
  8. basil for garnish
Instructions
  1. Bring a medium pot of water to a boil, add pasta noodles and cook 'til al dente. Drain, and return pasta to the pot. Reduce heat to medium low. Stir in can of diced tomatoes and garlic salt. Add cheese and gently stir until melted and combined. Garnish with chopped basil and a little extra Parmesan cheese if you want!

I’m kind of on a roasted pepper kick.  I’ll try not to overload you with everything roasted red pepper that I’ve been eating lately, but this Roasted Red Pepper Sauce I just had to share!  I’ll be honest, I’m not a make-sauce-from-scratch kind of gal.  Mostly because I like what’s quick.  This sauce is half-way home made and is still super quick– like, ten minutes quick– which is totally doable for me.

It’s great with any variety of pasta, but I recently served it with Monterey Gourmet Foods Chicken & Cheese Rigatoni.  Monterey Gourmet Foods has a variety of all natural pasta products to choose from but I played it safe for my kiddos and went with the rigatoni.  They loved it! The Fresh Spinach & Cheese Ravioli is a safe bet too and one my kids also like.  If your kids are a little more adventurous than mine, they have several internationally inspired pasta dishes you can try as well.  I’m certain any of it drenched in this sauce would be amazing. 

The fiery, chunky, roasted red pepper flavor added great depth to the rigatoni.  I’d definitely say it’s a few steps up from your traditional jar of store bought pasta sauce (I know,  because I use it all the time).

Owen’s my picky eater and I wasn’t sure he’d try the rigatoni with the roasted red pepper sauce (he thinks everything is spicy). But any time I let him help make dinner he takes much more interest in eating it.  So he helped blend up the sauce and boil the noodles.  His favorite part is dumping the noodles in the water.  He yells “bombs away!” as he does it every single time.  With a big bomb sounding explosion at the end. Such a boy.

Chunky Roasted Red Pepper Sauce 7

Quick & Easy Roasted Red Pepper Sauce

Ingredients
  1. 1 heaping cup roasted red peppers (juices drained)
  2. 1 can (6 oz) italian style tomato paste
  3. 1 can (8 oz) tomato sauce
  4. 2 tbsp chopped basil
  5. 1/2 tsp minced garlic
  6. 1/4 tsp onion salt
  7. 2 tbsp heavy cream or milk
  8. salt and pepper to taste
Instructions
  1. Place roasted red peppers, tomato paste, and basil in a food processor and process until mostly smooth with small chunks of roasted red peppers. Spoon into a medium sauce pan. Add tomato sauce, basil, garlic, onion salt, heavy cream or milk, and salt and pepper. Cook over medium heat and let simmer for about 6-8 minutes. Serve over favorite pasta.

This Cheesy Italian Meatball Penne Bake has become one of my family’s  favorite dinners.  Owen thinks meatballs are the coolest thing.  He sticks them with his fork and shoves the whole thing in his mouth at once.  And Miles can eat more of it than his big brother.  The kid loves the stuff.  And my husband, well, he can just about eat the entire pan.  What man doesn’t love meatballs?  Can you guess what I love about it?  The cheese! The one hang up with this dish?  It’s a mess of a dinner.  My boys are a mess , the pan’s a mess, even the oven is a mess.  A messy oven is my worst nightmare!  When was the last time you cleaned YOUR oven?

Cheesy Italian Meatball Penne Bake

Ingredients
  1. 1 1/2 lbs extra lean ground beef
  2. 1/2 cup Italian bread crumbs
  3. 1 egg
  4. 1/2 tsp salt
  5. 1/2 tsp pepper
  6. 1/2 tsp garlic salt
  7. 1/2 tsp onion salt
  8. 1/2 tsp oregano
  9. 2 Tbs grated Parmesan cheese
  10. 1 (13.2 oz) box of whole grain Penne pasta
  11. 4-5 cups marinara sauce (2 1/2 24oz jars)
  12. 1 1/4 cup mozzarella cheese (1/4 cup reserved)
  13. 1 1/4 cup shredded parmesan cheese
  14. salt & pepper to taste
Instructions
  1. Preheat oven to 350.
  2. In a large mixing bowl combine ground beef, bread crumbs, egg, and seasonings. Mix with clean hands until well incorporated.
  3. Form golf ball sized (1-inch) meatballs and place on a lightly greased one-inch deep baking sheet (it’s better to use a baking sheet with an edge). Bake for 20-30 minutes turning once half way through (cook until no longer pink in the middle). Set meatballs aside.
  4. Bring a large pot of water to a boil. Stir in penne pasta and boil for 9-10 minutes or until al dente.
  5. Drain pasta and pour into a large bowl. Gently toss pasta, 1 cup of each mozzarella and parmasen cheese, four cups of marinara sauce, and meatballs together.
  6. Pour into a greased 9X13 inch pan. Top with remaining 1/4 cup mozzarella and parmesan cheese and cover with foil. Bake for 20-25 minutes covered, then remove the foil and finish cooking for another 5-10 minutes, until cheese is melted and sauce is bubbly.

Taco Pasta

It’s been a wing-it kind of week for dinner.
 
Quesadillas…Cereal…Soup…
 
Just whatever we had on hand.  With no planning on my part. 
 
 
 
 
Then we had this Taco Pasta.   It turned out to be a great last minute, no plan kind of meal.  Got this one from my sister-in-law, who I can always trust to put a good meal on the table.  I just adapted it slightly to the ingredients I had on hand.  Chances are you’ll have everything you need to make it too.
 
 
Anyone else so glad it’s Friday?  I’ve got no plans for the weekend and love it.
Taco Pasta
 
Ingredients
8-12 oz bowtie pasta noodles, or other noodle of choice
1 lb lean ground beef or turkey burger
2 tsp minced garlic
1 (14 oz) can diced tomatoes with green chiles, drained
1 (15 oz) can black beans, drained
1 packet Taco seasoning
1/2 tsp cumin
2/3 cup cottage cheese
1/4 cup shredded cheddar cheese
Instructions
Bring large pot of water to a boil and cook pasta according to package directions (until al dente).  Reserve 1/2 cup of the water, drain and set aside. 
Meanwhile in a large pan cook meat over medium-high until cooked through.  Add garlic, diced tomatoes, black beans, taco seasoning and cumin. Stir, reduce heat to medium and simmer for 3-5 minutes.
Stir in cooked pasta, the 1/2 cup reserved water, cottage cheese, and cheddar cheese.  Continue stirring until cheeses are melted and sauce is blended.  Season with salt and pepper.  If sauce seems to runny let it simmer for a few more minutes over medium-low heat.
